4 oz. white chocolate

1 c. Pumpkin Pie Filling

1 1/2 c. heavy cream

3/4 c. milk

1/4 c. sugar

1/4 tsp. salt

1 tsp. vanilla extract

7 egg yolks

  1. Place the chocolate in a large bowl and set aside. Cook the pumpkin pie filling in a medium pot over medium-high heat until thick, about 7 minutes. Whisk in the heavy cream, milk, sugar, salt, and vanilla and bring mixture to a simmer. Add 1 cup of the pumpkin mixture to the egg yolks in a slow, steady stream, whisking continuously. Add the egg yolk mixture back to the pot and cook to 175 degrees, while stirring constantly.
  2. Strain the custard over the bowl of white chocolate. Stir until chocolate is melted and combined with pudding. Divide the custard among 10 4-ounce ramekins and cool to room temperature. Cover with plastic wrap and chill until set, about 4 hours.
