1 c. Pumpkin Pie Filling
1 1/2 c. heavy cream
3/4 c. milk
1/4 c. sugar
1/4 tsp. salt
1 tsp. vanilla extract
7 egg yolks

- Place the chocolate in a large bowl and set aside. Cook the pumpkin pie filling in a medium pot over medium-high heat until thick, about 7 minutes. Whisk in the heavy cream, milk, sugar, salt, and vanilla and bring mixture to a simmer. Add 1 cup of the pumpkin mixture to the egg yolks in a slow, steady stream, whisking continuously. Add the egg yolk mixture back to the pot and cook to 175 degrees, while stirring constantly.
- Strain the custard over the bowl of white chocolate. Stir until chocolate is melted and combined with pudding. Divide the custard among 10 4-ounce ramekins and cool to room temperature. Cover with plastic wrap and chill until set, about 4 hours.
